Sweet Summer Balsamic Peach Salad🍑
Ingredients:
2 medium size peaches; cut in slices
1-2 tbsp butter
Arugula
Red onion
Nuts (pistachios, almonds, cashews, or pecans)
Crumbled feta or goat cheese (as desired)
1 tbsp honey
1/4 cup Jennysong Balsamic Vinaigrette
Instructions:
- Melt butter in the skillet over medium heat. Add onions, stirring frequently for about 5 minutes.
- Add peach slices flat in the skillet and cook 3-4 minutes per side or until slightly charred and golden.
- Remove peaches and onions from heat and let cool.
- In the meantime, mix honey and Jennysong Balsamic Vinaigrette. Whisk until incorporated.*
- Assemble salad: Layer arugula and onions. Toss with dressing. Lay peach slices atop. Top with cheese and nuts.
*If you like more dressing, just double the ratio!
